Lava Cake made with Chunky CHIPS AHOY! Cookie Pieces
Kick your lava cake up a notch with the addition of Chunky CHIPS AHOY! Cookie Pieces. Try serving with ice cream on top or on the side for a fun play on temperatures.
Ingredients
Chocolate Ganache
- 1¾ oz. heavy cream
- ¼ oz. liquid glucose
- 2 oz. semi-sweet chocolate
Lava Cakes
- 1 oz. unsalted butter, melted
- 2 Tbsp. granulated sugar
- 3½ oz. Chunky CHIPS AHOY! Cookie Pieces
- 5½ oz. unsalted butter
- 4 oz. finely chopped 70% cacao chocolate
- 1½ oz. finely chopped unsweetened chocolate
- 3 each whole large eggs
- 3 each egg yolks
- ¼ tsp. kosher salt
- 1 tsp. vanilla extract
- 3¾ oz. powdered sugar
- 2½ oz. all-purpose flour
- ½ oz. unsweetened cocoa powder

Bring cream and glucose to boil. Pour over chocolate. Stir over hot water bath until chocolate is fully melted. Cool completely. Using 1 Tbsp. each, form into 6 balls (0.7 oz. each). Place on parchment paper-lined pan and freeze until ready to use.
Use the melted butter for buttering the six 4 oz. ramekins. Dust with granulated sugar. Divide Chunky CHIPS AHOY! Cookie Pieces evenly among bottom of ramekins. Set aside until ready to use.
Melt butter and chocolates in a medium bowl over warm water. Keep at 100ºF. Sift powdered sugar, flour and cocoa together; set aside. Whisk eggs and egg yolks, salt and vanilla. Add warm chocolate mixture to eggs; whisk to combine. Add combined dry ingredients and mix well. Immediately pour Lava Cake mixture over Cookie Pieces in ramekins. Place 1 frozen ganache ball in each ramekin.
Bake in preheated 375ºF standard oven 10 min. To serve, Place hot ramekin on a plate and eat from ramekin OR carefully invert hot ramekin onto serving plate.
